A brief history of the nougat

A tender and smooth candy whose origins date back to Antiquity, nougat is made from egg whites, honey and almonds.  Back in the day, it was made in Orient with almonds, honey and spices. The Greeks also made nougat, although they used to make it with nuts. In the 16th century, Damascus candymakers started making a smoother nougat and decided to incorporate Alep pistachios.  This dried fruit also brings a nice scent to the candy. Different varieties of nougat, both soft and hard, have appeared over the years, but the real nougat, as we know it today, started appearing in the mid 19th century. Egg whites, melted with honey and sugar, were added to allow the paste to breathe.
