Birth of
La Nougaterie
Both Europeans, the owners Patrick Augier and Caroline Marelli are inhabited by the culture of confectionery, and have been in business for over 35 years in the fields of cooking and pastry.
Became a resident of Quebec in 2006, this couple opened a magnificent boutique 2 years later, “Aux petits vins”, located in the same location as “La Nougaterie”. There you will find local products, Quebec creations and, as its name says so well, “little treats”.
The idea came a few years later to produce all these little treats that they offered at their store.
Thus, thanks to their know-how acquired over several years in France, they concoct their sweets with love and passion, in collaboration with Pierre, the Master Confectioner.
History of Nougat
A tender and creamy confection that dates back to Antiquity, nougat is made from egg white, honey and almond.
At the time, it was made in the Orient with almonds, honey and spices. Its production was also known to the Greeks who made it with walnuts. In the 14th century, confectioners from Damascus, Syria, decided to make a softer nougat and incorporate Aleppo pistachio. This dried fruit also has the property of providing a pleasant scent.
Various soft and hard varieties have appeared over the years. Real nougat, as we know it today, appeared in the mid-18th century. Egg whites, melted with honey and sugar were added
which allows the dough to be well aerated.
